Chocolate Waffles with Macerated Strawberries #Choctoberfest
These tender and fluffy chocolate waffles will make your breakfast extra special–top them off with a scoop of ice cream and macerated strawberries and you’ll be in heaven!

I made a quick easy and full-of-antioxidants-and-nutrients CHOCOLATE waffles. Yes, chocolate. Ted was so excited when I was making these for breakfast! These will take your breakfast to a level of decadence.
All you need is eggs, oil, Barleans Chocolate Silk Greens, flour, Imperial Sugar, buttermilk, chocolate chips, baking powder and baking soda. The Chocolate Silk Greens is an even better replacement for cocoa powder but with all the extra nutrients!
In a large mixing bowl, combine the eggs, butter and vanilla, and whisk for about 2 minutes. Slowly add in the buttermilk (or white vinegar+milk), Imperial Sugar and flour.
Add the Chocolate Silk Greens, baking powder, baking soda, salt and cinnamon. The little bit of cinnamon adds a great warmth to the waffles!
Gently fold in the chocolate chips. Cook the waffles in a preheated greased waffle iron until done, following the directions for your own waffle iron. I have a waffle iron that makes cute little heart shaped waffles <3
Serve immediately or keep warm in the oven. I served mine with vanilla ice cream and macerated strawberries! Why not 🙂 For the strawberries, just cut them in half and sprinkle a little Imperial Sugar on top. Set aside for 5 minutes so some of the juices release and creates a yummy sauce. This would be a great dessert or breakfast 😀 They also freeze well too.

Ingredients
- 1/4 cup + 2 tablespoons Barleans Chocolate Silk Greens
- 1/4 cup vegetable oil

- 1/2 cup chocolate chips
- 10 strawberries
- 1 tablespoon Imperial Sugar
Instructions

- Stir in the buttermilk (or white vinegar+milk), Imperial Sugar, flour, Chocolate Silk Greens, baking powder, baking soda, salt and cinnamon.
- Gently fold in the chocolate chips.
- Cook the waffles in a preheated greased waffle iron until done, following the directions for the waffle iron.
- For the strawberries: cut them in half and sprinkle 1 tablespoon sugar on top and set aside for 5 minutes (the juices will start to release).
- Serve immediately or keep warm in the oven. You can even freeze them for later.

Great way to use Barlean’s Chocolate Silk powder! Did you tell the family ahead of time how their waffles were going to include super foods and were really good for them? I let mine taste the results of using Barlean’s before I told them. lol Your waffles look delicious and perfect to serve as a special Sunday brunch item or dessert.
