Peaches Galore!
Peaches are everywhere right now and they are so sweet and juicy! Since they are at their peak right now, they are super cheap at the store. Not only are they healthy but you can make so many delicious things with them. Including desserts! (See #2).
Here are a few easy recipes (if you want to even call them recipes) to use the delicious peaches you have from the farmer’s market or grocery store!
#1 Peach and Arugula salad with Lemon Dijon Vinaigrette
Warm the peaches slightly in some melted butter in a saucepan for a few minutes to caramelize them. The soft peaches taste great on the peppery arugula!
To make the lemon dijon vinaigrette whisk: 3 tablespoons olive oil, 1/2 tsp dijon mustard, 2 tablespoons lemon juice, salt and pepper.
#2 Grilled Cinnamon Peaches
All I did was cut the peaches in half, brush with oil/melted butter (so they don’t stick to the grill) and sprinkle a little cinnamon on top before putting them on the grill. Grill for about 3-4 minutes on each side until golden brown and soft. That’s it! Such a healthy delicious summer dessert!
#3 Peach Blueberry Sangria
Everyone loves sangria in the summer and what better to put into it but peaches! I usually take a bottle of red, white, or rose and pour it into a pitcher. Add 1/4 cup peach schnapps, blueberries and peach slices (or chunks). Add some lemon or orange slices. Let it sit for a couple hours in the fridge. ENJOY! Sometimes I add some orange or pineapple juice if I’m feeling super fruity 🙂

Easy healthy salad with goat cheese, sweet peaches and peppery arugula!
Ingredients
- 1 peach
- 7 oz arugula
- 4 oz goat cheese
- raw cashews (or pecans)
- 1 tablespoon butter
- 3 tablespoons olive oil
- 1/2 tsp dijon mustard
- 2 tablespoons lemon juice
- salt and pepper
Instructions
- Cut peach into slices and warm in a skillet with 1 tablespoon of butter until slightly caramelized.
- Place peach slices over arugula and sprinkle raw cashews.
- Crumble goat cheese over salad.
- Whisk oil, lemon juice, dijon mustard, salt and pepper in a small bowl.
- Drizzle vinaigrette over salad.
