Easy Pork Sliders with Sweet and Spicy Slaw

Sliders with grilled barbecue rubbed pork medallions with a sweet and spicy slaw are perfect for snacking on the deck this summer!

They are currently working on their Kickstarter campaign. I highly recommend you jump on that bandwagon as soon as they start selling their rubs!

I had a huge pork tenderloin (3 pounds) so I divided it in half and put one half in the freezer to save for another day. I trimmed the fat and then sliced medallions (about 1/2-3/4 inch thick).

After slicing up the medallions, I placed them in a bowl and added 2 and a half tablespoons of Swine Dining Wimpy’s BBQ Rub to the pork. I mixed the pork with the spices (they smelled AMAZING–a little sweet with some herbs! rosemary maybe?) Let the pork sit in the refrigerator for about 30 minutes so the spices soak into the meat and marinate.

Heat up the grill and grill the medallions for about 2-3 minutes per side. They will be fairly thin but depending on the thickness you may need 4 minutes per side.

The ends of the tenderloin I skewered onto some skewers since they were too small and would slip through the grates on the grill. I also threw a couple cherry tomatoes on them because well….why not!

While the pork is cooking, you can whip up the sweet and spicy coleslaw!

All you need is a coleslaw mix (I was feeling lazy but you can certainly chop up some cabbage and carrots), Swine Dining Wimpy’s BBQ Rub, cayenne powder, chili powder, apple cider vinegar, sugar, and good ol’ mayo. Mix all of the ingredients together (amounts below) and voila! Coleslaw done.

I found these adorable little hamburger buns at Trader Joe’s (I’m obsessed-don’t judge) and added the pork and coleslaw on top. I also decided to make a little spicy mayo with a little chili powder and BBQ rub top spread on both sides of the bun.

These easy sliders were the perfect snack to chow down on while hanging out on the deck. The weather has been so nice lately and grilling just spells summer to me! The pork was sweet and juicy from the BBQ rub and the coleslaw took it over the top.

You absolutely must try these this summer! You could even make them ahead of time and pack them up in separate containers to take to a picnic. The pork tastes great at room temperature too!

Easy Pork Sliders with Sweet and Spicy Slaw

Sliders with grilled barbecue rubbed pork medallions with a sweet and spicy slaw are perfect for snacking on the deck this summer!

Ingredients

  • 2 and a half tablespoons Swine Dining Wimpy's BBQ Rub
  • 1.5 pounds pork tenderloin
  • For the slaw:
  • 14 oz coleslaw mix
  • 1 tsp Swine Dining Wimpy's BBQ Rub
  • 1/2 tsp cayenne powder
  • 1 tsp chili powder
  • 3 tablespoons apple cider vinegar
  • 2/3 cup mayonnaise
  • 2 teaspoons sugar
  • For the spicy mayo:
  • 4 tablespoons mayonnaise
  • 1/2 tsp chili powder
  • 1/2 tsp Swine Dining Wimpy's BBQ Rub
  • Mini slider/hamburger buns

Instructions

  1. Cut the pork tenderloin into 1/2 inch medallions.
  2. In a bowl, mix Wimpy's BBQ rub with the pork medallions.
  3. Place pork in the refrigerator for 30 minutes to let the flavors develop.
  4. Grill the medallions for 2-3 minutes per side and then let rest.
  5. Mix the coleslaw, BBQ rub, cayenne powder, chili powder, apple cider vinegar, sugar and mayonnaise in a bowl.
  6. For the spicy mayo, mix the mayonnaise, chili powder and BBQ rub together. Add more chili powder if you like it spicy!
  7. Spread mayo on each side of slider bun, and top pork medallion with slaw.
