Flourless Chocolate Cake with Fresh Strawberry Sauce
Time for some more chocolate folks! I made an AWESOME flourless chocolate cake over the weekend to celebrate my Uncle’s birthday and it was a hit. I topped it with chocolate ganache and fresh strawberry sauce. It is an easy dessert that is sure to impress your guests. Gluten free=carb free, right? You can fill up on it! I found the recipe on Lauren’s Latest and have made it numerous times since!
To make this deliciously rich dessert you need…..
First, break up your dark chocolate bars into pieces and add the stick of butter to the bowl. Yes, I know it’s a whole stick but that’s what makes this SO good! Next, microwave in short 20-30 second intervals until fully melted. You could do it in a double boiler…..but the microwave is so much easier!
Now, add 1/2 c granulated sugar and vanilla to the melted butter and chocolate mixture (I transferred it to a bigger bowl). I tend to add another tablespoon of sugar or so since I use super dark chocolate.
Add the eggs one at a time, fully incorporating each one into the mixture.
Sift 1/2 cup unsweetened cocoa powder and the pinch of salt into the bowl and mix.
Pour the chocolate batter into a greased 8 in circular pan and bake for about 25 minutes!
Chocolate Ganache
After you take the cake out of the oven and it is cooling you can start making the chocolate ganache! To make the ganache you really only need chocolate and heavy cream.
I heated up 1/4 c of heavy cream in a small saucepan until just simmering and then poured it over 1 cup of semisweet chocolate chips. Let it sit for a minute before you start stirring.
The chocolate will begin to melt so keep stirring until it is fully mixed and smooth.
Top the cake with the ganache once the cake has cooled. If you have extra ganache you could add a thicker layer of ganache or use the leftover to make truffles!
I served the cake alongside some fresh strawberry sauce to cut the richness of the chocolate. The recipe can be made in less than 10 minutes.
Fresh strawberry sauce
I cut up a pint of strawberries into small pieces, added 1/4 c sugar (you can adjust it to your preference), a 1/4 c water and the juice from half a lemon.
Let the strawberries cook over low-med heat until they start to let out some of their juices. After about 8 minutes, you should be left with a thick sauce. You can either leave it as is, mash it a little, or blend it in the blender so it is more of a liquid (I blended it for about 30 seconds).
This cake is so rich a small slice will do you in. Be sure to make the sauce–it really complements the chocolate!

Sinful gluten free dark chocolate cake with chocolate ganache.
Ingredients
- 4 oz. dark chocolate (around 50-65%)
- 1/2 cup butter
- 3/4 cup + 1 Tbsp granulated sugar
- 3 eggs
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon vanilla
- pinch salt
- 1 cup semisweet chocolate chips
- 1/4 cup heavy cream
Instructions
- Preheat oven to 375 degrees.
- Spray 8-inch cake pan with non-stick cooking spray.
- Melt butter and 4 oz. chocolate together slowly in the microwave (check every 20 seconds or so) or in a double boiler.
- Stir in sugar and vanilla. Add eggs one at a time and mix well.
- Sift cocoa into batter and stir in gently with salt.
- Pour into prepared pan and bake 20-25 minutes or until set.
- Cool completely before topping with ganache.
- For ganache:
- Heat cream in a small saucepan until just simmering.
- In a bowl, add cream to chocolate chips and let it sit for a minute.
- The chocolate will begin to melt; keep stirring until it is fully mixed and smooth.
- Top cake with ganache once cooled.
