Garlic Lemon Butter Salmon Foil Packs #CookoutWeek

Who knew you could throw a bunch of things into a foil pack on the grill and call it dinner! I adore seafood and healthy light meals in the summer. This recipe is easy peasy and wonderfully healthy I promise. These salmon foil packs are perfect for summertime grilling when you don’t want to heat up the house but you can also bake them in the oven all year long 🙂 The nice thing about foil packs is that the fish doesn’t dry out and everything gets bathed in the juices.
I picked out veggies on sale hence the zucchini and cherry tomatoes but this would be wonderful with bell peppers, asparagus or even onions.Â
On a piece of foil, wrap up a piece of salmon, veggies, a couple tablespoons of Chef Shamy Garlic Butter, lemon slices, and fresh herbs. Then, place the foil packs on the grill and let it do its thang 😉 Easy as that! The salmon and veggies get coated in that delicious garlic butter. You could try other types of fish but you will need to monitor the cooking time.
You can serve the packs with quinoa or brown rice to soak up that yummy sauce. After serving in the foil, just toss it in the trash! Easy clean up is always a plus in my book.Â

If you have leftover fish, it would be delicious over salad or you could even make it into a salmon burger with some breadcrumbs and egg. All you have to do after you mix it all together is sauté in a pan until crisp 🙂

- 2 lb salmon (four 1/2 lb filets)
- 1 lemon
- 8 tbsp Chef Shamy Garlic Butter
- 4 sprigs dill
- 4 sprigs thyme
- 1/2 cup cherry tomatoes
- 2 zucchini
- 1 tsp salt
- 1 tsp ground pepper

Cut lemon and zucchini into 1/4 in. slices. Slice the cherry tomatoes in half. Bring Chef Shamy Garlic Butter to room temperature if possible. Wash herbs and dry.

Cut out four 12 x 16 in. pieces of aluminum foil and place a piece of salmon on each section of foil. Scatter around vegetables evenly amongst the four pieces of salmon. Sprinkle salt and pepper over the salmon and vegetables. Dollop each salmon piece with 2 tbsp Chef Shamy Garlic Butter. Place two slices of lemon on top and one sprig of dill and one of thyme.

Wrap up each piece of foil into a rectangular shape--double folding the sides and the top of the foil over the middle of the salmon piece.

Heat up grill to med-high heat. Place salmon foil packs onto the grill and cook for about 10-12 minutes until salmon flakes apart and vegetables are soft. Alternatively, you could bake the salmon packs on a baking sheet at 400 for 10-12 minutes.

Open packets off the heat and be careful as they will be very hot! Serve in the foil packs.
Perfect way to make a one pot meal in the summertime.

The dish looks terrific. Allow it to be easier with bean hollandaise. No faults. Tastes just as excellent. Can maintain refrigerator for 23 days and you also may serve it chilly. Just what a excellent universe.
