One Bowl Chocolate Chip Banana Bread

We got back from NYC this weekend and headed over to my parents’ house for a little grilling! We had a huge feast of grilled bratwurst, steak, salmon and onions. My sister made a fresh caprese salad with sweet basil and purple basil! We finished dinner with some grilled peaches with cinnamon, greek yogurt and honey. I procrastinated on grocery shopping the next day and was scrounging around for breakfast foods Monday so I decided to do a little baking. I was craving some banana bread and decided to throw some chocolate chips in it! I have been using this banana bread recipe for years and adapted it from Simply Recipes. I even cut down on the sugar a little. It’s so healthy! What I love about this recipe is you really only need a fork/spatula and a mixing bowl. No mixer is required! Here’s how you make it:
I have to be honest–I put the yellow/green bananas in the ingredients pic but the bananas below are the ones I actually used….I freeze bananas when they become overripe (freezing in sandwich bags is easiest). Then, you always have bananas ready for banana bread! You want to try to avoid using green bananas for banana bread but I have heard you can ripen them quickly in the oven if you’re in a bind.
Mash 3 ripe bananas in a mixing bowl using a fork. Melt 3/4 cup butter in the microwave for about 30 seconds and add to the banana mixture. Add 1 teaspoon baking soda, a pinch of salt and 1/4 teaspoon ground cinnamon.
Once blended, add in 3/4 cup sugar and an egg. Not the prettiest I know!
Slowly add in 1 1/2 cups flour a little at a time.
Add in 1/3 cup mini chocolate chips to the batter.
Grease a loaf pan with nonstick spray and pour in the banana bread batter. Bake at 350 for about 55 minutes until a toothpick inserted in the center comes out clean. Let cool completely before slicing. Enjoy it for breakfast or a sweet snack! It’s super moist and has the perfect amount of chocolatey goodness. Recipe adapted from Simply Recipes.
