Simple Avocado Chicken Salad
A healthy take on chicken salad that is an easy lunch or quick snack.
I was scrounging around in the fridge last week for a little snack and all I came up with was some leftover rotisserie chicken. Thankfully I had some plain greek yogurt in the fridge and some grapes and decided to make some cute little lettuce cups! These are healthy and portable–you can even pack the salad for the lunch and bring along the lettuce cups.
This is barely a recipe since you only need a few ingredients and don’t really need to measure the amounts precisely. I cut some grapes in half, diced one stalk of celery and about 1 cup of cooked chicken. Put all of these ingredients into a small bowl.
For the dressing, in a separate bowl I mixed 1/2 c plain greek yogurt (greek is better since it’s quite thick) and 2 tablespoons of caesar dressing (I love Marie’s). It adds a little somethin somethin to the chicken and gives it a small amount of fat without adding tons of mayonnaise.Â
Once the dressing is mixed, you can add it to the chicken mixture. Dice up half of an avocado and gently toss it with the chicken (not too much so you can keep the pieces in tact). I added a few dried cranberries into the mix too for a little chewy texture. You can add in a little salt and pepper if you’d like.
Serve in little romaine lettuce cups because let’s face it they are adorable. But if you don’t have any you can definitely cut full romaine lettuce leaves in half or use butter lettuce instead. I ate more of these than I care to admit but they don’t have mayo so they are on the healthy list…right?
Ingredients
- 1 cup cooked chicken, diced or shredded
- 1/4 c grapes, halved
- 1 stalk celery, diced
- 2 tablespoons dried cranberries
- 2 tablespoons caesar dressing
- 1/2 c plain greek yogurt
- 1/2 avocado, diced
- 6-8 baby romaine lettuce cups
- salt and pepper
Instructions
- Mix together yogurt and caesar dressing in a bowl and set aside.
- In another bowl, mix the chicken, grapes, celery and dried cranberries.
- Add in enough dressing to coat chicken mixture.
- Add salt and pepper if necessary.
- Lightly toss in avocado pieces.
- Serve in lettuce cups.
